Grapes: 50% Malvasia Bianca del Chianti, 50% Procanico from 40 years old vines
Vineyard: in “Villa Patrizia” at 450m a.s.l. upon a windy hill
with a north/western exposure
Training system and production: Spurred cordon and branched guyot 8000 kilos/ha
Soil composition: loam-clay with good structure and rich in limy stones
Vinification: low temperature in stainless-steel tanks, after a quick skin maceration. Following soft pressure before alcoholic fermentation. The wine lays on the yeastscell with some batonages before bottling
Harvest period: second decade of September
Serving temperature: 7-8° C
Pairing: seafood, raw fish, shrimps, fresh cheese
Colour: pale yellow with golden reflections
Bouquet: grapefruit, white flowers, honey. Juicy and persistent
